“If you throw a stone down the rugola road, it won’t stop until it gets to the piazza”. This is what’s said about the road that rises from the cellar up to the hill. The vineyards here are used to produce this wine that is the best expression of the Garganega grape. 70% undergoes fermentation in steel and direct pressing. The remaining 30% is macerated for 5 days in contact with the grape skins and aged in wood for around 10 months.

TRAINING SYSTEM: Espalier and pergola

VINEYARD AGE: 50 years (average age)

SOIL: Clay-volcanic

VINIFICATION: A portion of the grapes undergoes whole-bunch direct pressing, then ferments and ages in stainless steel. Another portion macerates on the skins for 5 days and ages in 15 hl oak casks.

NUMBER OF BOTTLES: 8,000

TASTING NOTES
The nose is defined by its breadth and an "inter-seasonal" fleshiness, hovering between yellow peach and ripe orange. On the palate, it echoes this fullness; the sip is highly satisfying, flowing with an agile and sinuous rhythm before culminating in a kaleidoscopic finish.

PAIRINGS
Asian-inspired chicken, prepared with spices, ginger, and soy sauce, provides an exciting playground for the Rugoli.

VINIFICATION: A portion of the harvested grapes is immediately pressed and fermented in stainless steel tanks. The remaining portion spends 5 days on the skins in open-top vats, and continues aging in small oak barrels. Unfiltered.
